

A Mini Thanksgiving Dinner {Giveaway}
Pregnancy is weird. On a typical night I throw a previously prepared freezer meal into the crockpot and call it a day. Little baby in my belly, though, isn’t a fan of that idea. You know how most crockpot meals are kind of heavy and saucy and are served on rice or pasta (at least the ones I typically make)? Well all, Baby K 2.0 wants are fresh fruits and veggies or roasted vegetables and lean meats. I have a feeling this little one is going to be quite the health nut. I mean, with Caleb all I wanted was Arby’s curly fries. That’s why I’ve only gained 2 pounds so far and, with his pregnancy, I was up about 9 pounds by this point.
Since Thanksgiving is on its way, I decided to throw together a mini Thanksgiving dinner for my family. I still don’t have a ton of energy to cook (I mean, even when I’m not pregnant I don’t love cooking complicated meals) so a tasty roasted potato dish (scroll down for the recipe!) sounded like it was just up my alley. Add in the easiest turkey “recipe” ever and, bingo-bango-bongo, a dish my family (including Baby K 2.0) enjoys.
To be honest, I have a confession for you all, I don’t actually like Turkey all that much. It is honestly my least favorite part of Thanksgiving dinner. But… I was in the mood for ease and when I saw that the Jennie-O Oven Ready turkey had seasoning already on it and all you had to do was literally puncture the bag and put it in the oven I was intrigued and wondered if, just maybe, it would convince me to enjoy turkey. Let me tell you, it totally did!!! There’s something amazing about the rub that comes on the turkey and the juices that are already prepared in the bag give the turkey such moistness! It’s too bad I’m not in charge of the turkey for Thanksgiving this year because I totally would be buying a full sized Jennie-O Oven Ready turkey. Once we know who’s gonna be in charge of the turkey you better believe I’m going to be campaigning for them to branch out and try this amazing yumminess!

10-12 Small Red Potatoes
2 Granny Smith Apples
1 Tbsp Chopped Fresh Rosemary
2 Lemons
2 Tbsp Olive Oil
