Try this fantastic end of summer blackberry cobbler!

It’s September and that means everyone is getting pumped up for fall.  Everyone but me, that is.  Maybe it’s the fact that we live in the Pacific Northwest so summer starts a little later for us and fall means rain, but I want to hold onto whatever last drops of summer I can.  I adore the end of summer as the light gets golden, the nights get crisper, and the temperature still calls for tank tops and shorts.

I also love the end of summer because that’s when the blackberries ripen.  Usually we have to go searching for blackberries but this year we have them right in our own backyard!  I know, blackberries are weeds and Nate’s doing his darnedest to get rid of them before building a fence, but, for now, being able to head into the backyard for a morsel of sweet goodness is amazing!

Each year at this time I get a craving to make all the blackberry cobblers I can.  I volunteer to bring dessert to every occasion and, of course, I only use blackberries fresh off the bushes.

End of Summer Blackberry Cobbler

Ingredients

For Filling:
5 Cups of Blackberries (Fresh or Frozen)
1/3 Cup of Sugar
1 Tbsp Lemon Juice
1/2 Tbsp Cinnamon
1.5 Tbsp Cornstartch
For Topping:
1 Cup Whole Wheat Flour
1/2 Cup Oatmeal
3 Tbsp Sugar
1.5 Tsp Baking Powder
1/4 Tsp Salt
1/2 Tbsp Cinnamon
4 Tbsp Cubed Butter
1/4 Cup Milk
1 Egg

Instructions

1.  Preheat oven to 350 degrees.
2.  Mix all Filling ingredients together – coating all the berries with the powders and juices.  Fill an oven safe 9×13 pan with this mixture.
3.  In a medium sized bowl, stir together the flour, oatmeal, sugar, baking powder, and salt.  Add in the butter, milk, and egg.
4.  Drop small clumps of the topping mixture onto the berry mixture, covering as much of the berry mixture as possible.
5.  Place in the oven and bake for 30 minutes.
6.  (Optional: Serve topped with vanilla ice cream) Enjoy!
